WHAT DO WE CALL LATHOURI
Lathouri is the legume, from which we usually make fava beans. It is considered one of the first legumes cultivated by humans with roots in ancient times.
For 3,500 years the inhabitants of Santorini and the neighboring islands have been cultivating the legume of the species Lathyrus clymenum, otherwise known only as a wild plant.
The peculiar ecosystem created by the volcanic eruptions on the island of Santorini, the volcanic ash, the porous soil and the combination of moisture created by the sea and the drought, make this plant a unique resource.
